Bengaluru Food Safety Summit Examines AI Regulation

Bengaluru has emerged as a forum for discussions on how artificial intelligence could reshape food-safety compliance, traceability and regulatory monitoring. The discussions at a national food-safety conclave brought together policymakers, regulators, researchers and industry representatives to examine how technology can strengthen oversight while keeping consumer protection at the centre of a rapidly changing food system.

The focus on artificial intelligence reflects a broader shift in how food businesses are monitored. Digital systems can analyse large volumes of information from inspections, laboratory testing, supply chains and consumer complaints, potentially allowing regulators to identify patterns that would be difficult to detect through conventional monitoring alone. For Bengaluru, the issue has particular urban relevance. The city supports a large and complex food economy spanning restaurants, cloud kitchens, supermarkets, food-processing units, delivery platforms and informal vendors. As the urban population grows and food supply chains become more fragmented, maintaining consistent safety standards becomes increasingly difficult through inspection-based systems alone.
AI-based compliance tools could help address some of these gaps by enabling risk-based inspections. Instead of treating every establishment in the same way, authorities could potentially use historical violations, product categories, inspection records and other indicators to prioritise locations where intervention is most necessary. Such an approach could make limited regulatory resources more effective. However, greater reliance on automated systems also creates questions about accountability.

Algorithms can reflect weaknesses in the data used to train or operate them. In food safety, an incorrect risk classification could affect businesses and, more importantly, leave genuine public-health risks undetected. Regulatory agencies would therefore need clear human oversight, transparent decision-making processes and mechanisms for correcting erroneous assessments. Traceability was another important dimension of the technology discussion. Digital records can make it easier to follow food products through different stages of production, storage and distribution. Faster identification of contamination sources could reduce the scale of recalls and help authorities respond more quickly when problems emerge. The environmental dimension is also relevant. Better monitoring and traceability could contribute to more efficient supply chains by reducing avoidable spoilage and food waste. For a growing city such as Bengaluru, where food demand and logistics activity are expanding, improvements in supply-chain visibility could support both resource efficiency and consumer safety. Yet technology alone cannot substitute for basic regulatory capacity. Reliable laboratory networks, trained inspectors, consistent standards, accessible complaint systems and effective enforcement remain essential. AI should function as a tool that strengthens these systems rather than becoming a substitute for them.

The Bengaluru discussions point towards a future in which food safety becomes increasingly data-driven. The real test will be whether digital tools can improve compliance without increasing administrative burdens, while ensuring that consumers, small businesses and regulators all benefit from a system that is transparent, proportionate and responsive.
