Sofitel Mumbai BKC Teams Up with Winnow AI to Slash Food Waste

Hotel Sofitel Mumbai BKC, located in the Bandra-Kurla Complex, has taken a
significant step towards sustainability and responsible management by announcing
a partnership with Winnow, a leading food waste management solutions company.
This move makes Sofitel the first hotel in India to adopt Winnow’s cutting-edge AI
technology, aimed at dramatically reducing food waste within the hospitality
sector.

Food waste is a global challenge, with approximately 931 million mt discarded
annually, and food service establishments accounting for 26 percent of this
wastage. According to the World Economic Forum’s 2021 report, food loss and
waste impose a staggering cost of $936 billion on the global economy each year.
Recognising the urgency of addressing this environmental crisis, Accor, the parent
company of Sofitel Mumbai BKC, has set the goal of achieving net-zero carbon
emissions by 2050. Sofitel is now taking proactive steps to contribute to this target,
with a focus on effective food waste management as a crucial element of their
sustainability strategy.

Winnow’s advanced reporting system identifies areas within the kitchen where
waste can be immediately reduced, providing greater control over production and
minimising overproduction.

Sofitel Mumbai BKC’s collaboration with Winnow reflects the growing
commitment within the hospitality industry to address the critical issue of food
waste and its impact on both the environment and economic sustainability.
